Chewy Molasses Cookies

Ok, the video I’ve been working on for this week involved hand binding an art journal using large envelopes. I have chosen not to post it because after some tests on how the paper would hold up to all the paint and such that comes with art journaling, I found that you might as well use regular printer paper. It buckles and rips just as easily and printer paper costs much less. I’m thinking file folders would be a cheaper alternative to specialty mixed media paper. Going to try that next.

So instead I have decided to share my son’s favorite cookie recipe in its place. I can’t remember where I found this recipe years ago for the perfect Chewy Molasses Cookies. They have a crispy sugary shell and a yummy chewy cakey like inside.

Molasses Cookies

1 cup White Sugar

¾ cups Butter

1 Egg

¼ cup molasses

1 ½ tsp. Baking Soda

1 tsp. Cinnamon

½ tsp. Nutmeg

½ tsp. Salt

2 cups Flour

Approx. ½ cup White Sugar

Pre-heat oven to 350°

Cream sugar and butter together, Beat in egg then mix in molasses until well combined

Sift in dry ingredients and mix just until dough forms

Roll into Tablespoon sized balls, roll in sugar to coat and place on parchment lined baking sheet 3” apart

Bake in center of oven for 10-15 min, edges of cookies are just firm and tops are lightly cracked

Cool then devour

First Post

Ok, so I know starting a new blog is going to be slow going, but you have to start somewhere right? My dream, as unlikely as it is, is to become some sort of hugely successful blogger who makes a tonne of money by doing what I love: being a mommy and loving all things crafty/DIY. Let’s face it I’m probably not going to be the next “Martha Stewart” that is so not me. My perfectionist side of me is just not that well-developed. I’m more of a “let’s make a total mess and call it beautiful” kind of girl. I am a firm believer of letting things develop in their own way. If your toddler spills dirty paint water on a project you have been working on for hours and makes all the colors run and collide into a messy mass of poop colored swirls, it was meant to be swirly poop on a canvas and would look perfect hanging in his bedroom, or possibly the bathroom.

In case you haven’t guessed, I have a 2 ½ year old boy who loves to get into whatever mommy is doing. He is also the inspiration for the name of the blog “How about chocolate”. The most common answer to most of the questions I ask him. I had trouble on finding a name that I liked that wasn’t already taken. So I resorted to asking “THE BOYS” (which include my son and my 3 ½ year old nephew). And in the most matter-of-factly way you could imagine my son said “How about chocolate?” It stuck, it was meant to be.

I look forward to sharing my experiences as a stay-at-home mommy who likes to craft. I am currently working out the best camera set up for my craft video posts. First one will be coming soon! It’s actually a bit harder than it sounds to find the best angle, and I’ve already given up having sound in the videos. I’ll spare you the ear-splitting joy of 2 toddlers playing in the background.
